Brunch Pizza
This is a family favorite. Serves four with some leftover…but only if you’re lucky!
Here’s the lowdown:
Crust
♥ 1 package 24 oz. frozen shredded hash brown patties, thawed and broken apart;
♥ 1 egg beaten-salt & pepper to taste.
Egg Topping
♥ 7 eggs,
♥ 1/2 c milk,
♥ salt & pepper to taste,
♥ 1 c chopped ham,
♥ 1/2 c sliced fresh mushrooms,
♥ 1/4 c gr. onions chopped,
♥ 1/4 c chopped gr pepper, and finally,
♥ 1 1/2 c shredded cheddar cheese.
Cooking
♥ Preheat 400,
♥ Spray 15″ round baking stone with pam.
For crust…
♥ Combine potatoes, egg, salt & pepper,
♥ Spread in 14″ circle on prepared stone,
♥ Pat down.
♥ Bake 10 min.
♥ Remove from oven.
For egg topping…
♥ Whisk egg & milk in 1 qt bowl.
♥ Season w/salt & pepper, if desired.
Microwave on HIGH 3 min; stir.
♥ Spread cooked egg mixture evenly over potato crust;
♥ Top w/ham, mushrooms, gr. onion & bell pepper.
♥ Sprinkle w/cheese.
♥ Return to oven. Bake 10 min.
To serve…
♥ Cut into wedges w/pizza cutter…..10 servings
